Whole Wheat Jaggery Cookies

Ingredients
- 1 cup minus 2 tbsp Whole wheat flour
- 1/2 cup Jaggery powder
- 1/4 cup Unsalted butter, room temp
- 2 tbsp Milk (if needed)
- 1 tsp Vanilla extract (optional)
Instructions

In a bowl, whisk together butter and jaggery powder until light and creamy.

Add in the whole wheat flour and combine to form a smooth dough.

Place the dough on cling wrap and shape it into a log.

Wrap tightly and roll into a uniform cylinder.

Deep freeze the dough log for 30 minutes until firm.

Slice the log into even cookies using a sharp knife.

Place on a lined baking tray and bake in a preheated oven at 180°C for 15-20 minutes.

Let the cookies cool on the tray before serving.
