Lamington cake is an Australian cake, which are squares of vanilla butter cake dipped in a chocolate sauce and rolled in desiccated coconut.

Ingredients

  • Cake:
  • ½ cup curd
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup sugar
  • ¼ cup oil/butter
  • 1 tsp vanilla essence
  • 1 cup maida
  • ¼ cup milk
  • Chocolate sauce:
  • 50 g (1/2cup )Icing sugar
  • 1 tbsp cocoa powder
  • 2 tsp butter (room temp)
  • 25 g warm milk
  • 50 g desiccated coconut

Instructions

    To make this you can either bake your own vanilla cake or you can get a store bought cake.

    Give this all a mix till there are no lumps.

    Once the cake is cooled completely cut the top off to level it and then cut it into cubes of equal sizes.

    Roll the chocolate cake cube into the chocolate sauce thoroughly on all sides.

    Now roll the cake cube into desiccated coconut, let it cool and enjoy.
