Instant Carrot and Chilli pickle

The pickle recipe you dint know you needed! Its a simple recipe and its my favourite to eat in winters.

Ingredients

  • 5-6 light green chillies
  • 1 Indian carrots , large
  • 1/2 tbsp salt
  • 1/4 tsp turmeric
  • 1/2 tbsp Rai Kuriya
  • juice of 1 lemon
  • pinch of hing (aesofotida)

Instructions

  1. 1

    In a bowl, mix together carrot, chillies, sat and turmeric. Set aside for 1 hour. It will leave water. Drain all the liquid and discard.

    Add Rai kuria, hing and lemon with with the carrot and chillies and mix

  3. 3

    You can enjoy immediately or you can let it sit in lemon juice for 3-4 days for the carrots and chillies to soften.
