Ingredients
- Masala:
- 1 cup fresh coconut
- 10-12 g arlic cloves
- 10 g reen chillies(dark green)
- 1 tbsp sesame seeds
- 1 tbsp salt
- 2 tbsp sugar
- 1/4 cup water
- 2 cups coriander leaves
- 1/2 lemon juice
- Undhiyu:
- 3 tbsp oil
- 4-5 small brinjals
- 2 tsp mustard seeds
- 2 tsp ajwain
- 2 tsp sesame seeds
- 2 potatoes, boiled
- 1 sweet potato, boiled
- 1 purple yam, boiled
- 1/2 cup tuver dana , boiled
- 1 cup paper , boiled
- 1/2 cup green peas, boiled
- 7-8 muthiyas
- 2 cups water
- Coriander for garnishing
Instructions

In a mixer jar, add all ingredients except coriander and lemon juice and crush to make a paste .

Add coriander and lemon and mix to make the Undhiyu masala

Give 2 cross cuts to brinjals and fill it with masala .

In a Kadhai, heat oil and add the brinjals . Add water and let it cook for 10mins on low flame with the lid on.

Remove the brinjals once they soften and keep them aside

In the same Kadhai , add oil and add mustard seeds, ajwain and sesame seeds. Once they pop, add all the vegetables expect the brinjals. Add 1 cup water and mix gently .

Cover and let it cook for 10mins on low flame covered.

Add muthiyas and brinjals and add 1 cup water again and cover for 10mins with lid covered. Serve hot with puris or rotis.
