Fudgy Ragi Brownies
Fudgy, eggless, gluten-free brownies made with ragi flour and jaggery. Shiny-topped and melt-in-your-mouth — a guilt-free chocolate treat!

Ingredients
- 5 tbsp Ghee, melted
- 1/3 cup Dark chocolate, chopped (for melting)
- 1/2 cup Jaggery powder
- 1/2 cup Thick curd
- 1 tsp Vanilla extract
- 3/4 cup Sprouted ragi flour
- 1/4 cup Cocoa powder
- 1/4 tsp Baking powder
- 1/4 tsp Salt
- 70 g Dark chocolate, chopped (mix-in)
- 1/2 cup Walnuts, chopped
Instructions

In a bowl, melt ghee and dark chocolate in the microwave. Mix until smooth.

Add jaggery powder, vanilla, and curd. Mix until jaggery is completely dissolved.

Sift in ragi flour, cocoa powder, baking powder, and salt.

Mix to form a thick batter. Fold in chopped dark chocolate.

Transfer batter to a lined baking tin and spread evenly.

Sprinkle chopped walnuts on top.

Bake at 170°C for 20-25 minutes. Let cool completely before cutting.
