Ingredients
- Dry fruit soak:
- 3 tbsp cranberries
- 3 tbsp tutti frutti
- 3 tbsp cherries
- 3 tbsp prunes
- 3 tbsp raisins
- 3 tbsp orange peel
- 1 cup orange juice
- Caramel:
- 1/2 cup sugar
- 1/4 cup water
- Cake batter:
- 1 cup milk
- 1/2 cup neutral oil
- 1 tsp vanilla essence
- 1 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 tbsp cocoa powder
- 1/2 tsp cinnamon powder
- 1 \2 tsp cloves powder
- 1/4 tsp ginger powder
- 1/4 cup almonds
- 1/4 cup cashews
- 1/4 cup walnuts
- 2 tsp vinegar
- Pinch of salt
- Nuts and dry fruits for garnishing

Preheat the oven to 170C

For the dry fruit soak , cook all dry fruits in orange juice till they turn soft and juicy . Let it cool

For the caramel, heat sugar on a pan on low heat and let it caramelise . Once it starts to turn light brown and starts to bubble, stir gently and let the sugar turn into a dark brown color. Let it cool and then add water and mix till combined . Let it cool completely.

For the cake batter, mix milk, oil , vanilla, dry fruit mix ans caramel and mix gently .Soft flour, baking powder, baking soda , cocoa powder , and mix. Add nuts and spices and mix . Add the wet mixture to dry and mix gently . Add vinegar and fold it in gently .transfer the batter to a greased and lined tin and bake at 170C for 60 min . Half way through baking, cover the cake with alimony foil and bake .
