
Crème Caramel
Classic French crème caramel with a silky custard layer over bittersweet caramel. Episode 8 of Desserts Around the World series.

Ingredients
- 1/4 cup Sugar (for caramel)
- 1 tbsp Water (for caramel)
- 1 1/4 cups Milk
- 1/4 cup Fresh cream
- 1/4 cup Custard powder
- 1/4 cup Sugar (for custard)
- 1 tsp Vanilla essence
Instructions

In a saucepan, heat sugar and water until the sugar caramelises. Do not stir. Once it reaches an amber color, take it off heat.

Pour the caramel into ramekins or glass containers immediately.

In another saucepan, whisk together milk, cream, custard powder, and sugar until there are no lumps.

Place on medium heat and keep stirring continuously.

Let the mixture thicken until it reaches a custard consistency.

Pour the custard on top of the caramel layer.

Let it cool to room temperature, then refrigerate for 4 hours.

Unmould onto a plate and serve chilled!
