Blueberry Overnight Oats

Ingredients
- 200 g Blueberries (for compote)
- 1/4 cup Water
- 3 tbsp Sugar or stevia
- 3-4 drops Lemon juice
- 1 tbsp Cornstarch
- 3 tbsp Water (for cornstarch)
- 1 cup Rolled oats
- 1 cup Milk
- 2 tbsp Crunchy peanut butter
- 1/2 cup Greek yoghurt
Instructions

Make the blueberry compote: combine blueberries, water, sugar, and lemon juice in a saucepan. Cook on medium heat.

Mix cornstarch with 3 tbsp water. Add to the blueberry mixture and stir until thickened. Let cool.

In jars, layer oats, milk, peanut butter, and yoghurt. Stir to combine.

Top with the blueberry compote.

Cover and refrigerate overnight (at least 8 hours).

Serve cold with fresh blueberries and granola on top!
