BASBOUSA is a delicious cake made using semolina and covered in a rose flavoured sugar syrup. Its super simple to make and I have shared an egg free version.

Ingredients

  • Cake:
  • 1 1/3 cup rava or semolina
  • 1/2 cup castor sugar
  • 1/3 cup oil
  • 1/2 cup dessicated coconut
  • 1 cup milk
  • 1 tsp vanilla essence
  • 1 tsp vinegar
  • 1 tsp baking powder
  • Sugar syrup:
  • 1/2 cup water
  • 1/2 cup sugar
  • Few drops of lemon juice
  • 5-6 drops rose essence or 1 tsp rose water

Instructions

    In a bowl., mix rava,sugar, oil, coconut, milk, vinegar and vanilla. Cover and rest it for 30mins

    Add baking powder and mix till well combined

  3. 3

    Bake at 180C for 25 mins .

    Let the cake cool completely . Cut into 9 pieces.

    To make the sugar syrup, cook together water, sugar, lemon and rose essence. Let it thicken slightly. Switch off the gas and pour hot syrup over the cooled cake.

    Let the cake rest for 30mins . Garnish with sliced almonds and enjoy!
